Mexican Bean and Rice Salad

Salad to accompany Burritos

  • 400g Rice, cooked
  • 1.5 tsp Cumin
  • 1 x Red Onion, fine dice
  • 1 x Green Pepper, dice
  • 1 x Lime, juice
  • 1 x Lime, zest
  • 3 cloves Garlic, minced
  • ¼ cup Coriander, chopped
  • 2 x Jalapenos, fine dice
  • 1 x Black Beans 400g tin
  • 1 x Corn Can 200g tin
  • 1 x Kidney Beans 400g

Combine, chill for 1 hour and serve
