Mexican Bean and Rice Salad
Salad to accompany Burritos
- 400g Rice, cooked
- 1.5 tsp Cumin
- 1 x Red Onion, fine dice
- 1 x Green Pepper, dice
- 1 x Lime, juice
- 1 x Lime, zest
- 3 cloves Garlic, minced
- ¼ cup Coriander, chopped
- 2 x Jalapenos, fine dice
- 1 x Black Beans 400g tin
- 1 x Corn Can 200g tin
- 1 x Kidney Beans 400g
Combine, chill for 1 hour and serve
