Chicken Liver Pate
This was one of the first things I ever made. A recipe of my mothers. Delicious around Christmas time. And a great gift if you buy some nice containers at Ikea.
- 1 pound of chicken livers
- 1 large onion couple of cloves of garlic
- bouquet garni
- salt and pepper
- lemon juice
- 1 table spoon of brandy
- 6 oz of butter
Sauté onion and garlic in 2 oz of butter and some olive oil. Add salt and pepper. Then add livers and bouquet garni and sauté over gentle head for 10 mins. Remove to plate and remove bouquet garni and let cool. Place butter in liquidiser and soften. Add livers to liquidiser along with brandy and lemon juice. Blend. Then remove to a dish and cover with melted butter to seal. Place in fridge to set. Remove from fridge and bring to room temperature before using.
